Easy Microwave Quinoa Recipe

 

Hey there! 🙂

I love quinoa! What’s not to love about a food that’s good for you and actually tastes good? And now that I finally came up with a great microwave quinoa recipe, I love it even more- especially when I can avoid cooking over a hot stove in the summertime heat (like, say, 105 degrees, which it’s supposed to be here for the next couple of days). 😛

Quinoa can be used as a main dish just as easily as a side dish. In your favorite rice dishes, try using quinoa in place of the rice for a nice change. My favorite quinoa dishes are cold salads mixed with chicken and vegetables. It’s such a versatile food, it can be used in just about anything.

Like I said, this is super easy, really fast, and the quinoa comes out light and fluffy!  

Ingredients:

1 1/2 cups uncooked quinoa, rinsed
3 cups water

Directions:

Mix the quinoa and water in a 2 quart casserole dish. Cover and microwave on high for 5 minutes. Stir, recover and microwave on high for another 5 minutes. Uncover and check- if there is still water on the bottom of the casserole dish, stir, recover and microwave for 2 minutes, repeating until all the water is absorbed. Serve warm, room temperature, or chilled.

Cooking times will vary depending on your microwave and altitude- experiment to figure out how much time works best for you. If you plan on serving this plain you can use chicken broth instead of water for a more savory taste.

If you want to add a little more zing to this recipe, try using chicken broth in place of the water. You can also add some parsley like I did to give it some color!
